This Almond Red Mole Paste is made to a traditional Recipe from Puebla by Cocina Mestiza in Mexico City. With more than twenty ingredients, this mole paste combines the sweetness and spiciness so characteristic of the Poblano moles. This ones is beautifully aromatic and rich in flavour depth. 

To make it, you just have to put the paste into a blender of food processor, add 1 litre of your prefer stock, we do chicken or duck, and blend until you have a homogenous sauce. Transfer to a sauce pan at medium heat and stirr regularly until you reach the desire consistency for your mole sauce.  Used in enmoladas, chicken or turkey moles, chilaquiles and many more delicious dishes.
