Mole is an ancient cooking sauce that Mexican have been eaten for milenia. I like to say that Mole is Mexico's answer to a curry: it's a spicy sauce to serve with various meats and to enjoy with some rice. There are hundreds if not thousands of mole recipes and they're vary from region to region, depending on the chillies and ingredients native from that region. Moles come in loads of different colours: white, yellow, green, red, black, purple, pink... literally the colours of the rainbow and they are all delicious! The red to black coloured Moles are a little more complexed in preparation and ingredients and they tend to have chocolate and their complexity rivals the top sauces of the world.
