Our Fresh masa is made in our in-house Molino from ethically sourced Mexican heirloom corn. We nixtamalize our corn by hand and we age it to develop the perfect flavour. When the nixtamal is at its optimal age, we mill it in our traditional molino to turn it into fresh masa. As soon as the masa is made, it is vacuum packed and freeze to preserve its freshness. Thaw it out overnight in the fridge. You can keep it in an airtight container for up to five days after defrosting. If you prefer fresh masa, e-mail us and we can let you know when the next batch is being made so you can pick it up before we freeze it.
