What is it?
Every month, we host a special pop-up featuring a single, carefully curated Mexican dish using the very best of Irish ingredients and our Mexican pantry.
Our handmade gorditas are made with the best of ingredients, including our in house mix of fresh masa made from ethically sourced heirloom yellow corn and masa-harina from Oaxaca. We use Free Range Pork from Carlow for our own fresh Mexican chorizo and for our homemade pork chicharron, Fat Tomato organic Tomatillos, St. Tola's Greek style cheese. Although our gorditas are gluten free, they are made fresh in a kitchen that handles gluten, nuts, tree nuts and sesame on a regular basis!
