We are BIG fans of the Fat Tomato project in Wexford and we've worked and collaborated with Anthony for years. His bay leaves are absolutely fantastic and we're delighted to now stocking them in the shop.
Unlike most commercial bay leaves, which sit for years in warehouses before reaching a supermarket shelf, Fat Tomato ones are freshly picked and air-dried naturally, preserving their essential oils, colour, and full aromatic character.
A staple in Mexican cooking, bay brings layered, savoury depth to soups, stocks, moles, barbacoas and birrias, as well as marinades and pickles. We are never without these in our kitchen.
