Dried Mulato Chilies

Mulato chilies start life as dark poblano peppers which are often the product of a second blushing in the poblano plant. They are never sold fresh, but are set to dry to turn them into Mulatos. They are darkish-brown, wrinkly and soft in texture, with a very similar look to their chili brother, Anchos. The best way to tell an Ancho from a Mulato is to hold it against the light. Anchos show redish tones in their skin, while Mulatos are completely dark.

Often more concentrated and sweeter in flavour than anchos, Mulato chilies are fruity, with an amazing chocolate taste to them, hence also known as chocolate chilies. They have a little bit of heat, but nothing that will kill you.

They smell like prunes and they add a depth of flavour to many moles and sauces in Mexico. When used in baking, they enhance the taste of chocolate and they are responsible for the beautiful black colour in many moles in the south of Mexico. Often misunderstood outside Mexico, Mulatos are delicious in both savoury and sweet dishes. I use them a lot in my kitchen and since they're dried, they last forever in a mason jar!

Dried De Arbol Chilies

De Arbol Chilies (or tree chilies) owe their name to the fact that the bush they grow from, looks like a small tree. They are a quite hot and spicy chilli, hence their popularity in Mexico to make salsas and marinades. They start life as green arbol chilies, but as they ripen and become red, they are set aside for drying.

They are bright red, shiny and with a smooth look, but don't let them fool you, they have a very though skin. They taste best lightly toasted and go well with garlic, lemon and oregano.

It always amazes me how fresh they smell, with a hint of citrus to them. Lime and lemon undertones to their taste, they are amazing in salsas and also to make chili flakes. They are very, very hot, not for the faint hearted!

Dried Chipotle Morita Chilies

50grams

Chipotle Morita chilies are a mixture of ripe jalapeño and serrano peppers from the last picking of the plant, that have been dried and smoked. They are smaller than the Chipotle Meco variety, but they compensate on flavour and spiciness! They are dark red in colour, with a shiny, leathery texture. They are quite hot with a subtle sweet and smokey flavour and they are very meaty. I adore them.

They are delicious in salsas and stews and their smokey heat will complement many traditional Mexican dishes. They are one of the most popular Mexican chilies in Ireland, everybody is going nuts about them, understandably though, as they are delicious!

Dried Pasilla Chilies

50grams

Pasilla Chilies, also known as black chilies, are thin, long, dark chilies with an almost brittle, wrinkly appearance. Pasilla means 'little raisin' in Spanish, which is quite fitting as they are rich, sweet with an almost prune-like taste to them. They smell a bit like liquorice too.

When fresh, they are known as 'chilaca chili' and they are grown in the central regions of Mexico. It is the main ingredient used in Oaxaca's black mole sauce. I adore it with lamb, for some reason I think they are meant for each other.

Dried Cascabel Chilies

50grams

Cascabel Chilies are small rounded chilies, redish-brown in colour with tons of 'rattling' seeds inside (hence their name 'cascabel' or 'rattle' chili). It's very low in heat with a beautiful nutty flavour to it.

It is widely used in Mexican cuisine as a base for numerous salsas and marinades and to make chorizo from scratch. Often used with dried guajillo chilies for a perfect combination of colour and flavour.

Cascabel chilies start life as fresh bola chilies that are then dried. They have a very shiny and though skin, so they need to be boiled a little longer than any other dried chilli to dehydrate them, I normally do 10 to 15 minutes.

Dried Guajillo Chilies

Guajillo Chilies are bright-red coloured, thin, long chilies with a shiny, almost velvety skin. They're very mild in heat. They have a subtle green tea flavour with mild berry overtones to them.

Guajillos start life as a 'Mirasol' fresh chili, which grows in pretty vertical bunches in a bush, always 'looking or pointing at the sun' (hence their name 'mira-sol' or looking at the sun).

They are super popular to make tamales, rubs, pastes, moles and many other Mexican dishes. I absolutely love their vibrant red colour and the delicious flavour they add to stews and soups. Amazing in a potato mash too! Since they're dried, they last for ages in an airtight container and are easy to use in every day cooking.

Often used in combination with cascabel dried chilies for a killer paste!

Dried Piquin Chilies

50grams

Piquin chilies are minute chilies domesticated from wild plants. There are a huge variety of them in Mexico and they vary in colour and shape. They share one thing though, they're small and uber hot! These Piquin chilies are small, red in colour and have a gorgeous citrusy taste to them. They are shiny and soft in texture.

They go really well with lime and oregano and would make the dullest of salsas interesting and fiery hot. They keep well in a mason jar away from direct sun light!
